Meet the Bartender

Jonathan Melikidse has worked in the restaurant industry since the early 1990’s. With humble beginnings as a driver for food deliveries, he quickly moved into a server position at a Los Angeles Italian eatery where his interest in wine, beer and cocktails grew.

 

Right after turning 21, Jonathan asked to move behind the bar. On his first shift, the senior bartender who was supposed to train him failed to show up. So, he took the reins, hit the ground running and never stopped pouring since. He moved to Maui in 2001 and took a position at Roy’s in Kahana, where his passion for pairing amazing beverages with a stellar menu truly blossomed. In March 2023, a partnership with Chef Jojo Vasquez was the perfect opportunity to use his expertise to create a mixology-driven bar program that fits seamlessly with the wonderful vibe and cuisine of FOND restaurant.

 

When not behind the bar, Jonathan delves behind the camera and into the screenwriting world. He is one of the creators behind Moku Moku, a slice of life comedy series about three best friends trying to make do in Upcountry Maui, away from busy tourist towns that the world perceives as Hawaii.
