Nestled in West Maui’s Napili Plaza, Fond is a culinary gem serving Hawaiian Regional and New American cuisine. Fond’s diverse cuisine is rooted in local ingredients and vibrant flavors, and our FONDness of serving our community and island guests.


Fond is also a culinary term and French for base, referring to the browned bits and drippings of meat and vegetables left on the bottom of a pan. It is the most flavorful part that a cook deglazes to make a wonderful stock, sauce or gravy. The fond gives soul and depth to a dish.

Beats & Eats and DJ Eliza

Beats & Eats

Every last Friday of the month, culinary and music cultures blend beautifully during Beats & Eats. The event was inspired by Chef Jojo’s time as a sous chef in California’s Ritz-Carlton, Marina del Rey’s signature restaurant.

Eliza Escaño worked as the resident DJ at the hotel lounge and restaurant at the time. The two bonded over music and food, and would eventually get married and raise a family on Maui. On this popular monthly event, Chef Jojo creates a special pop-up menu, sometimes in collaboration with other chef peers, while DJ Eliza plays a soulful blend of R&B, hip-hop, trap, new soul, afrobeats and electronic music.


It is simply a fun and extraordinary event that has been going strong since 2015 and offers such a treat for music connoisseurs and foodies alike.
